Shrimp Coconut Soup Recipe


Our shrimp coconut soup recipe tastes absolutely delicious! The CurrySimple coconut soup is made in Thailand and loaded with fresh lemongrass and galangal that is grinded very fine to allow you to really taste the herbs and stay healthy. Prepare this for your friends and they will agree that it tastes even better than your favorite Thai restaurants coconut soup. Cooking your shrimp inside the soup gives it a nice seafood flavor. Shrimp Coconut Soup Recipe - Serves 4
Ready in 10 minutes

    12 medium sized shrimp (3 shrimp per serving) peeled and de-veined
    1 stalk scallions (chopped)
    1 cup sliced mushrooms
    1 pack 12 oz CurrySimple Coconut Soup
    12 oz water

1. In a pot, add 12 oz of water and bring to boil with high heat
2. Add shrimp - cook in water 2 minutes or until almost cooked
3. Add 12 oz. CurrySimple Coconut Soup in pot and heat 1-2 minutes
4. Make sure the shrimp is cooked
5. Pour about six ounces of soup in four bowls
6. Top with chopped scallions and sliced mushrooms

Tip: To make extra spicy, add dry red pepper flakes.
