Green Curry Chicken & Vegetables Recipe

Spicy... Healthy... Tasty... What else could you want for dinner? People often ask me how spicy the green curry is. Well... it has a kick to it but it is not a hot sauce. It is not supposed to hurt you! Although it does have some heat that you can appreciate that allows other flavors to hit your taste buds. If you are a real "hot head" just add some crushed red pepper flakes and you can set your mouth on fire!

Ingredients

24oz raw chicken breast sliced in bite-sized pieces
1 red pepper
1 green pepper
10 stalks of asparagus
1/2 cup of green beans
15 basil leaves
12oz package of CurrySimple Green Curry Sauce

Preparation:

Heat a stir-fry pan to high heat
Add a little cooking oil (or a little green curry sauce) and stir-fry the chicken breast
Cook chicken until about 75% cooked
Add green/red peppers, green beans, asparagus and basil leaves
Stir-fry veggies with chicken for about 2 minutes
Add CurrySimple's green curry sauce in the pan
Heat the green curry until at serving temperature
Serve with jasmine or brown rice

I have had this with baby corn and carrots slices too. Most delicious meal I have ever had. God I love green curry!
