I am a huge fan of salmon! The medium spicy
red curry sauce adds the perfect flavor to this wonderful fish. I would recommend a higher quality salmon fillet especially when cooking to a medium or medium rare temperature. This recipe is great with a red curry sauce but a spicier
green curry version is great as well!
Ingredients:
3 Ten ounce Salmon Fillets
1 Red Pepper
1 Green Pepper
1/2 cup mushrooms
1 cup chopped broccoli
1/2 cup sliced zucchini
1/2 cup sliced carrots
12oz package of CurrySimple
Red Curry Sauce
Preparation:
Grill salmon fillets and cook medium well
In a stir fry pan heat the
red curry sauce with high heat
When the sauce is hot, add green & red peppers and mushrooms
Steam the broccoli, sliced zucchini and carrots until soft. Place vegetables on the side of your plate
When salmon is at your desired serving temperature place in the center of your plate
Top salmon with vegetable red curry sauce mixture
