I frequent Thai restaurants all over the world as often as possible. It is interesting to see what vegetables are often paired with the different curry sauces in different regions. This recipe is how most Thai restaurants in Atlanta serve a chicken massaman. Making this at home is quick and easy!
Ingredients:
24oz raw chicken breast sliced in bite-sized pieces
1 avocado
1 cup of diced white onions
1/2 cup of roasted cashew nuts
12oz package of CurrySimple
Massaman Curry Sauce
Preparation:
Heat pan to high heat
Add cooking oil (or a few ounces of massaman curry sauce) and stir-fry chicken
When chicken is 75% cooked add diced onions
While the chicken and onions cook, slice the avocado into thin slices and arrange on plate
Add CurrySimple's
massaman curry sauce and mix for about 2 minutes
Serve curry on plate with avocado and top with cashew nuts
Great with brown or jasmine rice!
