Serve a Thai tofu coconut soup in just five minutes using our coconut soup recipe. Make sure you use firm tofu. If the store bought tofu is to soft, it will break apart in the soup. The tofu does not need to be cooked as it will heat up quickly in the hot soup. Add a dash of dry red pepper flakes to really spice it up!

Tofu Coconut Soup Recipe - Serves 4
Ready in 10 minutes

      10 oz firm Tofu (chopped into 1/2 inch cubes)
      1 stalk scallions (chopped)
      1 cup sliced mushrooms
      1 pack 12 oz CurrySimple Coconut Soup
      12 oz water

In a pot, add 12 oz of water and 12 oz. CurrySimple Coconut Soup
Heat at high heat until the soup begins to boil
Turn off the heat and add the Tofu, mushrooms and scallions
Let the Tofu heat up in the pot for 1 minute before serving
Pour about six ounces of soup in four bowls
Top with chopped scallions and sliced mushrooms

Tip: To make extra spicy, add dry red pepper flakes.
