
Special thanks to Tom in Atlanta for sending us his quick recipe. Tom opted for a quick "lazy" way of cooking a shrimp massaman curry. Don't have time to chop and shop for fresh vegetables and shrimp? Well Tom was in a hurry and grabbed some frozen items out of the freezer and put it together with the CurrySimple massaman curry sauce. How was it I asked? "Awesome!" Well that is good enough for me. This is a great idea for people that don't cook too often and have fresh veggies readily available in the kitchen.
Tom's "Lazy" Shrimp Massaman Curry Recipe - Serves 3
Ready in 10 minutes!
Ingredients:
Frozen Shrimp (1) pound
Frozen Vegetable Medley (1) pound
(Tom's Medley included Broccoli, Carrots, Green Beans and Red Pepper)
12 oz CurrySimple Gourmet Massaman Curry Sauce
Preparation:1. Stir-Fry shrimp in a hot pan (3 minutes).
2. In a separate pan stir-fry the frozen vegetables (2 minutes).
3. Because of the frozen ingredients there will be more water in the pan when thawed out. Pour out the water and combine the shrimp and vegetables in one pan.
4. Add 12oz of CurrySimple Massaman Curry Sauce.
5. Stir sauce and vegetables together at medium temperature (2 minutes).
6. *Optional - Serve with Thai Jasmine or Brown rice.
