coconut soup is made in Thailand with fresh coconut milk and loaded with galangal and lemongrass. With this recipe, we are going to add a bunch of fresh veggies that accompany the taste of coconut soup. Anyone can make this recipe! You can get as creative as you like with trying different vegetables to make the flavor suite your tastes.
Veggie Coconut Soup Recipe - Serves 4
Ready in 10 minutes
8 pieces of baby corn
1/4 cup diced tomatoes
1/2 stalk scallions (chopped)
1/2 cup sliced mushrooms
1 pack 12 oz CurrySimple
Coconut Soup 12 oz water
1. In a pot, add 12 oz of water and 12 oz of CurrySimple
Coconut Soup2. Heat at high heat and bring to boil
3. Add baby corn and cover pot with a lid
4. Allow the baby corn to soften for about two minutes
5. Pour about six ounces of soup in four bowls
6. Top with chopped scallions, tomatoes and sliced mushrooms
Tip: To make extra spicy, add dry red pepper flakes.
