This is an easy recipe to prepare a chicken yellow curry dinner at home using CurrySimple's Gourmet Yellow Curry Sauce. Serves 3
Ready in 15 minutes

1 pouch CurrySimple Gourmet Yellow Curry Sauce
1 package boneless chicken breasts, chopped into bite-size pieces (allow approximately 6-8 oz. meat per serving)
2-3 medium potatoes, cubed or cut into small wedges
1 cup of diced onions (Note: other vegetables may also be used, such as cauliflower, broccoli, onions, etc.)
1 cup of sliced carrots
2 Tbsp. vegetable or nut oil for stir-frying (e.g. peanut, canola, sunflower, etc.)

1. Place oil in a wok or large frying pan over medium-high heat. When hot, add the chicken pieces and potato. Stir-fry for 1 minute.
2. Add approximately 1/3 cup of the curry sauce to the wok/pan. Continue stir-frying for another minute.
3. Turn down the heat to medium and cover wok/pan with a lid. Allow to simmer for 10 minutes.
4. Add the vegetables, stirring to combine. Replace lid and simmer for another 5 minutes, or until everything is well done.
5. Now add the remaining curry sauce, stirring to combine.
6. When sauce is heated through, your curry is ready is eat.
7. Serve with plenty of white or brown rice, or with noodles as desired.
