This is my favorite way to prepare a meal with the Yellow Coconut Curry sauce. Mainly because it's quick and all the ingredients are so inexpensive.

2 Small Potatoes
1 White onion - chopped
1 Carrot - chopped
1 1/2 Cups White Rice
CurrySimple Yellow Curry Sauce

Prepare White rice. Set aside.

Chop potatoes into 1 inch cubes and bring to a boil in a medium pot, boil for about 5-7 minutes or until tender. Drain in a colander and return to heat, add carrots and onion, and curry sauce. Cook for another 2-3 minutes and serve over rice. Absolutely delicious.

This recipe is perfect for anyone that wants to make a yellow curry that is just like what is served at a Thai restaurant. It would be great with tofu, chicken or shrimp as well. Yummy!!!
Yeah exactly, it's great for vegetarians but add any meat to make it a carnivore's dream! My fiance's only critique was, "It would be awesome with chicken".
