Mango Chicken Stir-Fry and Vegetables
This recipe is loaded with fresh vegetables, chicken and a light mango flavor. Start off with a hot pan to sear the chicken and keep the moisture inside. Time permitting; you may want to marinate the chicken breast in a few ounces of the mango sauce. Add you desired vegetable and mix in the mango sauce. This recipe is really easy to make so you might want to start cooking your rice as it will probably take the longest to cook. We suggest using Thai jasmine rice for its excellent complimenting flavor. The CurrySimple Mango Stir-Fry Sauce will add a light balance of mango and spice to any meal.
Serves 2 ready in ten minutes
Ingredients:
1 lb Chicken Breast (chopped in bite sized pieces)
1/4 cup diced onions
10 baby corn
1/2 cup squash
1 red pepper (sliced)
1/2 cup sliced carrots
4oz CurrySimple Gourmet Mango Stir-Fry Sauce

Preparation:
1. Heat pan to medium-high heat
2. When pan is hot - add chicken and cook through about 75%
3. Add diced onions, baby corn squash, red pepper, carrots - stir-fry for 2 minutes
4. Add 4oz of CurrySimple Gourmet Mango Stir-Fry Sauce in the pan.
5. Turn heat down to medium temperature. Mix the mango sauce in with the chicken and vegetables.
6. Serve with white, brown or jasmine rice on the side.
Tip: To increase the level of spice, just add crushed red pepper.
