"I primarily created this recipe because I had home grown japanese eggplants and pork tenderloin on hand. I think you could substitute zucchini for the eggplants."

Green Curry with Pork and Eggplant

1/2 to 1 lb. asian eggplants, sliced into rounds1 lb. whole pork tenderloin, sliced into bite-sized pieces1/2 cup frozen peashand full of fresh basil leavesAdd one tablespoon sesame oil to a wok or frypan. Saute eggplants until they begin to soften. Add pork and continue cookings until pork is done, about 5 minutes. Add 1 12.3 oz. package of CurrySimple Green Curry. Add the peas and the basil leaves and simmer until all ingredients are heated.Serve with jasmine rice and fresh bean sprouts.See More

Recreating my favorite Thai restaurant dish

After I received my first shipment of CurrySimple, I reviewed the menu from my favorite Thai restaurant and realized that most of the dishes on the menu could be recreated easily with CurrySimple. One of my favorites is a dish they called Princess Favorite Chicken, which is chicken, carrots, broccoli, and cashew nuts in a yellow curry.
