Recreating my favorite Thai restaurant dish

After I received my first shipment of CurrySimple, I reviewed the menu from my favorite Thai restaurant and realized that most of the dishes on the menu could be recreated easily with CurrySimple. One of my favorites is a dish they called Princess Favorite Chicken, which is chicken, carrots, broccoli, and cashew nuts in a yellow curry. I had just eaten this dish at the restaurant a few days before, so it was easy to tell that I had "nailed" the dish when I made it at home using the CurrySimple yellow curry. It was soooo easy. I can't wait to try to recreate the other dishes on the menu.
