Duck with Red Curry Sauce

Duck with Red Curry Sauce Recipe

This recipe only works if you live near a Chinatown--or a Chinese restaurant where you can buy half a roast duck.

1 small onion, sliced lengthwise into 1/4" strips
1/4 lb green beans, topped and tailed
1 yellow and 1 orange bell pepper, cut lengthwise into 1/4" strips
1 pack CurrySimple Red Curry Sauce
1/2 roast duck, cut Chinese-style for serving
1 medium tomato, diced

Heat a tablespoon or two of canola or peanut oil in a wok or pan. Add onion, green beans and bell pepper strips and stir fry about five minutes until starting to soften.

Add Red Curry sauce, roast duck and diced tomato, simmer a few minutes and serve over rice.
