Beef and Veggie Green Curry

Description

With the abundance of summer produce at the farmers market, I like to use as many fruits and veggies in my recipes as possible! This week we had okra, summer squash, and red corn on hand. My husband wanted red meat, so we compromised on some natural, organic steak.

Ingredients

2 New York Strip Steaks or other steak cut
2 1 and 1/2 Cups chopped okra
1 cup chopped summer squash
1 packet CurrySimple Green Curry Sauce
2 ears sweet red corn or sweet yellow corn
2 cups cooked Jasmine Rice

Directions

1. While slicing beef into strips, heat large skillet over medium high heat.
2. Sear beef strips in pan.
3. Once beef is no longer pink on the outside, reduce heat to medium-low and add okra and summer squash for just a couple of minutes of cooking.
4. Add CurrySimple Green Curry Sauce to pan, reduce heat to low, cover and allow to simmer for 20 minutes.
5. While beef and veggies are simmering, boil corn or nuke in the microwave.

Serve and enjoy the beautiful colors and flavor!
