Red Curry Chicken Potato Okra Recipe

Ingredients

For Okra:

1 medium-size sweet onion, chopped
1 tsp mustard seeds
1/2 tsp ground cumin
1/4 tsp dried crushed red pepper
2 Tbsp vegetable oil
1 Lb fresh okra
3/4 tsp salt

For Potato and Sauce:

1 C CurrySimple Red Curry Sauce
1/4 C chicken broth
2 large new potatoes

For Chicken:

1 Lb chicken breasts
1 Tbsp olive oil
fresh ground pepper
sea salt
2 C chicken broth

Instructions

1. Brush chicken breasts with olive oil, sprinkle with sea salt, sprinkle with fresh ground pepper. Place in slow cooker and pour in chicken broth. Cook on low for 4-6 hours.

2. Cook new potatoes in microwave: prick all over with fork so they don't explode. Heat for about 3-4 minutes or until soft all the way through.

3. Sauté first 4 ingredients in hot oil in a large skillet over medium-high heat 5 minutes or until onion is tender. Add okra; sauté 15 minutes or until okra is lightly browned. Stir in salt.

4. In a small sauce pan, heat Red Curry Sauce and chicken broth together. Stir occasionally until heated through.

Cut potatoes in half, each plate gets one half, fluff each with fork, add butter if desired. Top potato with pulled chicken and red curry sauce. Add serving of sauteed okra on the side. ENJOY!
