It turns out I ordered one of everything because my husband and I love Thai food. I have been cooking it for a long time now, sometimes from scratch and some times with various mixes. When I receive my order (which was very prompt) I tried the red curry with chicken. I steamed two chicken breast halves and then sliced, keeping the pieces sized generously. I then blanched some fresh green beans in boiling water until bright green and rinsed with cold water. After warming about 1/3 of the sauce in the packet, I added some fresh mushrooms and cooked a few minutes. I then added the chicken and beans and heated through. I served with rice and a cold ground pork spicy salad. This fed two people with enough left over for a hearty lunch a couple of days later. It was excellent. This was the best "fast" Thai food that I have ever had. Can hardly wait to try the rest." My husband and I are big fan of Thai food, especially with fresh basil and red curry. Overall, we are very happy with the package we tried. I added fresh basil, more red curry powder, Thai chili pepper (since we like spicy food), and more fish sauce for flavor. I used chicken and green and red peppers and served with jasmine rice. Honestly, it was as good – or better – than theirs, but I wouldn’t have the heart to tell them! With your sauces in the cupboard, we will eat a lot more Thai food at home. As I did the dishes, I realized that your curry sauces would be an excellent sauce base for other dishes; with a little buerre blanc and some herbs, it’s a scrumptious sauce for fish, for example. I am thinking of how to use the red curry as a dipping sauce for a modified Japanese gyoza. I think I can use these curry sauces as layered flavors in a lot of different dishes, and I can’t wait to experiment with all of them. We picked up some chicken, a green pepper, snap peas, bamboo shoots, and broccoli. We first sautéed the chicken and then mixed in the veggies. Then we poured in the curry and let it slowly come to a light simmer. Then we turned down the heat and let the curry flavor the chicken and veggies for about 5 min and then we were done.
