"Thank you for this wonderful product ! I used to make curry from "scratch"...hunting down herbs and paste and usually involving an hours drive to one Farmers Market or another. Your product is superb! My favorite is the Red Curry. I simply saute some shallot, red bell pepper, and shredded carrot - add the red curry sauce - and toss in some thawed, shelled, shrimp and heat till the shrimp are pink - finish with some chopped basil. This is the yummiest stuff on the market, and you have made it so easy to aquire and enjoy! "I am a well-travelled foreign news correspondent, having spent a good deal of my career overseas, including 5 years at bureau chief in Thailand and 4 in Pakistan and India. Naturally, living there and also traveling frequently to Malaysia and Indonesia I have had more than my share of curries. Back here in the US, I like to keep up the cooking skills I picked up out there (including courses in Bangkok, Delhi and Bali -- Balinese cooking is heaven, BTW, but tough to find back here). When I'm lazy or tired, I have resorted to prepackaged curry pastes or mixes. Most I have found to be horrid (except when I can get our current Bangkok correspondent to send me some green curry paste). Even curriesI have had in some Thai restaurants -- and we have a lot of them here -- are IMHO too timid for anyone with a palate for the genuine article. But I have to say that your curries are the closest prepackaged thing to an authentic Thai curry or soup that I have found on this side of the world. A bit pricey? Perhaps. But the quality is superb and as authentic as an old Asian hand has found. I'd love to try to sneak a pakcage of it past my old cook and see what he thought -- and he was a damned good cook who taught me much of what I learned about Thai/Southeast Asian cooking.
