Peach Mango Shrimp Red Curry Recipe This recipe can easily be made year round but is a winner when peaches are in season. If possible, try to pick some up at your local farmers market. The juices of the peach along with the added mango flavor creates a curry sauce like you have never had before. You will still taste the coconut flavor but the herbs and spices of the red curry become less apparent. It leaves you with a unique taste that you won't find at your average restaurant or dinner table.









Peach Mango Shrimp Red Curry Recipe - Serves 2
Ready in 10 minutes!


Ingredients:

    Shrimp (1) pound
    2 Peaches chopped into bite-sized pieces
    1/2 Cup Chopped Zucchini/Yellow Squash
    1 Red Pepper
    4 oz CurrySimple Gourmet Mango Stir-Fry Sauce
    8 oz CurrySimple Gourmet Red Curry Sauce

Ingredients - Shrimp, Peaches, Zucchini, Yellow Squash, Red Pepper, Mango Stir-Fry Sauce, Red Curry Sauce Add and Stir-Fry Shrimp for 2 minutes Add Zucchini, Yellow Squash and Red Pepper
Add red curry sauce Add Mango Stir-Fry sauce Add sliced peaches


Preparation:

1. Stir-Fry shrimp in a hot pan (2 minutes).
2. Add Yellow Squash, Zucchini and Red Peppers (1 minutes).
3. Pour in the CurrySimple Red Curry Sauce and Mango Stir-Fry Sauce (2 minutes).
4. Add chopped peaches. (1 minute).
5. *Optional - Serve with Thai Jasmine or Brown rice.
